It may not have been ready until midnight, but finally a half-decent meal šŸ™„

After seeing somebody mention having some zucchini pakoras with yogurt rice, I got an urge. Sounded like a good combo, and I got some more zucchini yesterday.

Add some mixed pickle on the side, and it was a great reasonably light meal. (As usual, I didn’t really use either of the linked recipes, but they look pretty good.)

There was enough batter left after dipping all the zucchini slices that I threw in the rest of the carrot from the rice (grated) and some shredded cabbage to use up the rest. A little variety, and that turned out tasty too. I was starting to feel vegetable deprived the past couple of days, which was also part of the thinking there.

Now I have like 3x the pakoras I need tonight, but they usually reheat well under the broiler anyway. Should have lunch covered tomorrow, with plenty of extra rice too.

Shame I didn’t think of the yogurt rice while the heatwave was still going strong. That’s basically a cold rice salad, and it will keep well for several days in the fridge. The cooling food would have been extra welcome just a few days ago, but I’m happy enough to get it now.

(Spicy Popcorn, Movie night snacks, Curried Popcorn)

Something quick and easy that I decided to try, and this batch turned out really good. Reminded by some masala popcorn a friend’s mom liked to make, though for some reason I had never tried putting any together myself until tonight.

I used coconut oil because I was concerned about maybe burning the butter, and it’s great for popping corn anyway. Also used some chaat masala instead of the garam masala, and tossed that in at the end along with the salt. Next time I’d probably use more of the chili powder, but a pretty good flavor blend to my taste.

(You could sub a little less cayenne if you don’t have the Indian chili powder, BTW. Or use paprika if you want flavor without the heat.)

Plenty of room to adjust seasonings to your taste, with some trial and error šŸ˜…

Tonight’s delight: Some quick jazzed-up scrambled eggs, on buttered toasted bread. Partly because I had the end of a nice loaf of bread to use up before it went more than slightly stale, plus some odds and ends of sweet peppers.

No cheese added tonight, though that’s good too. Just plenty of butter all around.

Still not as much as in one street food version from Mumbai I ran across on YouTube a while back. Wouldn’t be surprised if that guy used half a pound per (large) plateload. Not in the mood for quite that much tonight šŸ˜‰

Tonight’s delight, while Mr. C is off fencing: some quick no-recipe red lentil/masoor dal I threw together. With some carrot and broccoli added so I can pretend it’s a balanced meal.

Also, on the side: some leftover onion raita out of the fridge.

Once again, I tried and failed to make a small batch. But, the leftovers should come in handy in the freezer. The veggies might get a weird texture, but hey.

Corn & Cheddar Mashed Potato Fritters

I wouldn’t have necessarily thought of making a cross between a cheesy potato cake and a corn fritter, but I tried it to use up some leftover mashed potatoes and a small can of corn. It turned out great.

With dill dip on the side (from a mix this time), to go with some quick lemon pepper salmon and broccoli.

Didn’t really follow a recipe, but the proportions there don’t look bad. If I were just going to eat them on their own without any kind of sauce, I would probably add more seasoning to the batter, though. Was tempted to try them with salsa, but that didn’t go as well with the rest of the meal.

I wasn’t totally sure about that leftover chicken, so I decided to round out the rice with a quick egg.

I figured that if it involved pav bhaji masala and veggies, I was probably going to like it. Not bad at all, especially for the amount of work.
