Probably a get-again, actually. To my taste, it didn’t even need any seasoning adjustment. Though I did throw a little parsley in, mostly for color and because we had some.

(Unlike with a lot of British-made stuff, it didn’t even need salt beyond the little bit in the pasta water! Thankfully the Demon Sodium doesn’t seem to be terrifying the rest of Europe to the same extent now 🙄 Not really a big deal with a pasta sauce, but some things will just never taste right trying to add the salt afterwards.)

Another endorsement for the BiAglut pasta! Unlike pretty much any other GF pasta brand I’ve tried in 10+ years of the celiac dx, this stuff is totally fine to finish off in a sauce, without it going mushy and gluey (!) Impressed again at how it just behaves like a decent regular wheat pasta. The second bowl was still nice and al dente.

I had almost forgotten how much I enjoy linguine, so of course I only bought a couple of packs to try. May need to order more before too long 😅

OK, that took longer than planned.
Especially using the smallish iron skillet, making it 3 batches.

But, I decided to just go ahead and cook all the zucchini, with just a little salt and olive oil. With the idea of going ahead and sticking most of it in the fridge, to marinate in some lemon and oil. Adjust seasonings as needed for that and for what I’m eating tonight.

Actually got those zucchini primarily to marinate and snack on, but hadn’t gotten around to doing it yet. Finally cooked, at least 🙄

ALSO speaking of therapists it’s wild to me that sometimes you see some discourse on how therapy works and it’s said with such confidence but it’s also Completely and Utterly wrong.

Like that all therapists are a monolith who will tell you the exact same thing–and that thing is Exactly how Healthy or Unhealthy your life is, and how you must make it Maximally Healthy.

It’s such a bizarre thing.

My favorite version of this is when my friends, who are in therapy, are told they simply Must Get Therapy to fix this Pressing Condition that isn’t even like, in the top 5 of things they are working on.

for real! or when people tell you to Get Therapy for something that isn’t actually negatively affecting you at all (or just not enough to make therapy worthwhile); it’s just bothering them.

Or when actual medical people think stuff like this. Recently, someone asked me (while supposedly referring me for therapy) which of my mental health issues I wanted to ‘solve’ first, as if they were all discrete items that could be tackled one at a time (and as if it was safe or ethical to let the others fester while doing one at a time).

I did the math.  If I do a load of laundry every week (I technically have to do two, as my undershirts are washed at a different temperature and air dried), so its $6 a week.  That’s $312 per year.  There are six units in my building, assuming they are spending the same on average (but probably more), that’s $1872 per year that my landlord pulls in.  I can FRIGGIN GUARANTEE YOU that the collective building *DOES NOT* spend $1872 per year in water and power to run the washer and dryer.  I also pay $1200 per month in rent, which is $14,400 per year.  Between 6 units that’s $86,400, plus the laundry fees lets call that $88k that the building pulls in per year.  I can FUCKING GUARANTEE YOU this building does *NOT* use that much in water and property taxes, and every unit pays for its own electricity.

My landlord owns 10 buildings, all of the same design.  The entire lot of 10 buildings has one superintendent.  The buildings do not have AC, their appliances have not been replaced in a minimum of 20+ years, and the washer and dryer are…well they’re ancient.

I feel *ZERO* sympathy if I can make this work in the laundry room.
