I’m about to try making a half-recipe of this, using a GF flour blend and some virgin coconut oil because I forgot to buy more butter earlier. (The icing can wait for tomorrow before we eat it, once somebody brings butter 🙄)
Also, subbing some chai masala for the other spices. The blend is not that far off what’s called for here, and that worked really really well in some gingerbread before.
I haven’t been eating many sweets at all for a good while now, but it’s hard not to feel deprived not doing any baking this time of year. Scaling it back with only two people in the house and my blood sugar to consider, but I also have a couple of other things in mind that haven’t gotten made yet but hopefully will soon.
These little guys are starting to look more like corys and less like tadpoles.
They’re very active, and getting enough bigger that I would be considering moving them over to their own larger tank, if there were many more than 7 of them in that 2L capacity Marina hang-on.
PSA: “Healthier” does not mean low calorie, low fat, low sugar, low carb. Healthier does not mean less. Healthy is relative to each person’s needs.
Also, guilt-free is not a description for food. Guilt is not an ingredient; it is a feeling. No matter how many ingredients or calories you remove from that food, the guilt is in your mind, not the food.

I have to remind myself of this continually. That other people’s definitions of “healthier” are often the polar opposite to what “healthier” needs to mean for me.
